It's a format built around trust: the kitchen decides the meal, and the guest agrees to follow wherever that leads.

Amrina's main dining room already features an open kitchen, so watching the team work isn't exclusive to the Chef's Table alone. They're seated at its edge, close enough to watch a dish come together from raw ingredient to finished plate, and close enough to ask Chef Jassi or his team about a technique or ingredient in the moment it's happening.

Chef Jassi trained at the Culinary Institute in Kolkata and earned a degree in International Hospitality Management from Napier University in Edinburgh, then spent a decade in India's top five star hotel kitchens before leading kitchens at Rooh in San Francisco and Punjab Grill in Washington, D.C. Watching that level of technique applied to a plate a few feet away, with no menu to tell you what's coming next, is a different experience than reading about it in a menu description.
